Saint-Maurice, Valais - SwitzerlandAfter 1,500 years of devotion, the Abbey of St. Maurice has decided to start making beer, but in a contemporary way. Unique in Switzerland, the brewery uses customized yeast from a parchment of the Abbey dating back to 1319 for its white beer; a start-up from the University of Lausanne collected yeast strains from the Abbey itself that give the beer its unique and authentic taste.
