Light, saline, slightly creamy, supported by superb acidity and beautiful minerality, Hip Hip Chardonnay doesn't hide its tropical notes (pineapple, papaya, mango) and lovely citrus notes: orange and lemon zest, tangerine, key lime. What richness! In addition, there are white flowers, honeysuckle, oregano, white pepper, and a nice stony touch with perfectly balanced tannins. A clean and mineral finish. While it's true that Chardonnay excels in Burgundy, it performs just as well in the Jura, where it finds its local style and is often blended with Savagnin. Following the Jura's appreciated method, it frequently undergoes skin maceration. This Chardonnay was macerated for two months with whole clusters in 2020 and aged in tanks. It was bottled in July 2021.
