a select blend of 4-year-old spontaneously fermented, Lambic-inspired beer conditioned on 450g/L (aka a giant pile) of plump and juicy summer peaches & nectarines from @agriberryfarm. All of our Belgian Lambic-inspired beer is brewed as traditionally as possible. We employ a turbid mash of 60% barley & 40% wheat, an extended boil with aged whole-leaf hops, overnight cooling & natural inoculation in our rooftop koelschip, followed by spontaneous fermentation in oak & extended aging (in this case 4 years!). No yeast ever gets added at any point in the process. Packed with intense yet refreshing peach & nectarine character with moderately low acid & a perfect lambic-like backbone. Further is 6.4% ABV & has been conditioning in bottles for 1 year.
