It's that time of the year again. Hop harvest! We love making this beer almost as much as we love drinking it. An early morning trip up to Llagostera in northern Cataluña to harvest beautiful Chinook cones and transport them back and get them straight into our whirlpool to extract all of that fresh hop goodness. Keeping the malt bill the same, we have changed the hop that we are pairing with Chinook. This time a good dose of Strata to accentuate the pine and grapefruit notes of the fresh Chinook. The result is an incredibly smooth bodied IPA that has a tangible grassy, resinous undertones but bursts fruit on the front end.
