A rye based ale dry hopped with Cashmere and Pacifica, fermented by captured wild yeast from the skins of local cherries. It was then aged in 500 litre french oak barrels for 10 months before blending with a single barrel that had been fermented with our house mixed culture was added for a touch of acidity and balance.
