Faune

Faune is a small, sharply focused Swiss brewery specialising in mixed-fermentation beers and wild ales. Here, time and nature do the work: the brews age in wine barrels, where wild yeasts and bacteria weave complex, tart, fruit-laden profiles. The deliberately small range carries names borrowed from wildlife, such as Salmo and Vulpes, two wild ales aged in merlot barrels with notes of juicy peach and a fine acidity. A destination for lovers of wild, patient and living beers, running against the grain of standardised production.
