Bottling date: 26/01/2023. For this Druif, we macerated the Gewürztraminer grapes – which retain their characteristic fragrance – harvested in the summer of 2022 in Bourgheim, Alsace, in lambic aged between one and three years. The older portion accounts for nearly 80%, giving a weighted average age of over 31 months. The final fruit intensity is 437 grams of Gewurztraminer grapes per litre of finished Druif. Nearly 65% of the nine different lambics were brewed with local grains. A small portion of this blend has also been bottled in magnums. 100% 3 Fonteinen.
