A Tue Tête - Canon Sauvignon - 6.6% - 75cl - Bte
Description
This beer was brewed in April 2020. It spent its first summer in our 1,200-litre vat, after which I added 150 kg of Sauvignon Blanc pomace (grape press residue) from grapes grown without any inputs. After 10 months of maceration, the grape marc has imparted delicate floral aromas, as well as subtle notes of honey and fresh grass. The lactic bacteria present on the marc make this beer a touch more taut than our other creations this year. Its crisp acidity and fine bubbles give it a thrilling freshness! It’s perfect for a pre-dinner drink or to cut through the richness of a decadent dessert.
