Description

Ivy is a beer made with 100% regionally grown pale malted barley. In the kettle, it sees both three to four-year aged whole leaf hops, as well as pellet hops from the most recent harvest. Both are grown here in Oregon. It is the most simple of our recipes, yet one of the most complex in expression. One malt, one hop, our wonderful local water, and time. Ivy spends two years in neutral wine puncheons. We choose from these barrels a blend that is funky, but not too funky. Tart, but not too sour. Complex, but still hedonistic. Really, a blend that we are happy to make, to blend, and ultimately to share, in celebration of our new home.

Tillamook, OR - USA Located on the Oregon Coast, De Garde Brewing is dedicated to unique offerings. The crafts are inspired by historical traditions and local experimentation. But wait ... what does that mean? First of all, they don't add lab-grown yeast to ferment their beer. They simply cool the wort naturally in a cooler. Amazing yeast and microflora are all around you! Once the must has cooled, they transfer everything to oak barrels (some large, some small, some medium). Each beer takes its time in barrels to complete its fermentation. Most of their beers take between 6 months and 5 years and more in barrels before being packaged. Each bottle is naturally packaged and ready to taste when they drop it. Although beer can age, please note that the fruit and hop additions will wear off over time, but you will have new flavors as it matures!
