Description

The Château is a four year blend of spontaneously fermented and aged barrels, with an average total age of approximately 29 months in oak. After tasting, blending, transferring and bottling, the beer was further conditioned in bottles for approximately 5 more months. All of our favorite multi-year blends have a notable Brettanomyces funk to them, but each individual composition expresses its own unique personality. As a rather old composition, this beer leans in a much funkier direction. Mineral and earth characteristics dominate the aroma, with a complexity and intensity matched in the taste. It finishes with a very dry and crisp feel, allowing a lingering impression of the aged barrels and Brett character.

De Garde

Tillamook, OR - USA Located on the Oregon Coast, De Garde Brewing is dedicated to unique offerings. The crafts are inspired by historical traditions and local experimentation. But wait ... what does that mean? First of all, they don't add lab-grown yeast to ferment their beer. They simply cool the wort naturally in a cooler. Amazing yeast and microflora are all around you! Once the must has cooled, they transfer everything to oak barrels (some large, some small, some medium). Each beer takes its time in barrels to complete its fermentation. Most of their beers take between 6 months and 5 years and more in barrels before being packaged. Each bottle is naturally packaged and ready to taste when they drop it. Although beer can age, please note that the fruit and hop additions will wear off over time, but you will have new flavors as it matures!
