Character This sparkling wine is a blend of juices from the 2019 and 2020 harvests, to which juices from 2021 were added to induce bottle fermentation. The slightly brioche nose evokes stone fruits. The palate is soft, very smooth, without sweetness or bitterness: a wine for pleasure, with a fine and delicate bubble. Pairing This sparkling wine can be served as an aperitif and can accompany an entire meal. It pairs well with oysters, tapas, fish, poultry, or desserts, among other options. Wine Service Serve chilled, at 8-10 degrees Celsius. These grapes were sorted by plot, harvested at maturity, around 12 degrees of potential alcohol. Certified organic production. Winemaking After one year of aging in tanks, bottling took place at the beginning of the 2021 harvest with the addition of fresh grape juice from the new harvest and a yeast starter for bottle fermentation. No dosage.
