Cider from Brasserie l'Apaisée (Carouge, Geneva), specialists in wild fermentation and barrel ageing. This cider is fermented with the house culture dominated by Brettanomyces (Lambicus, Clausenii, Bruxellensis) and then aged in barrels, at the crossroads of cider and beer. The result is a dry, funky and complex profile: rustic and woody notes from the brett, bright acidity, ripe apple and a light vinous touch. An original, living creation for lovers of wild fermentation.

Carouge, Geneva - SwitzerlandThe Brasserie l'Apaisée is Xavier Righetti's crazy project. Barely returned from a stay in Quebec in 2014, during which he discovered with jubilation the omnipresent “craft” scene, and therefore began to brew in his kitchen.Indeed, the revelation of the hoppy IPA beers transformed his perception of beer, and no turning back was possible. Finding little offer in Geneva, the only option seemed to be to brew a beer the way he liked it: dry and hoppy.Among its many medicinal properties, hops - a cousin of cannabis - are used for sleep disorders. Making beer is also a way to get back to a more manual and less stressful activity away from computer screens. The name L'Apaisée was a perfect match.
