This time we’re heading to Asia, and more specifically to Thailand, with the famous Sriracha sauce. We could really see it pairing well with an exotic fruit and a generous helping of indulgence. Pineapple therefore seemed the perfect choice, especially in a Pastry Sour format. The fruit comes across as wonderfully fresh and juicy, whilst the Sriracha gently warms the palate and adds surprising umami and salty notes.
