SpeciationSpeciation Artisan Ales is a small American brewery founded in January 2017 by Mitch and Whitney Ermatinger in Comstock Park, Michigan, before moving to the Uptown neighborhood of Grand Rapids under the name Speciation Cellars. Following an evolutionary approach to brewing, it specialises in wild and sour beers inspired by farmhouse and mixed-culture traditions. Rather than inoculating its beers with lab-grown yeast, it relies on the micro-organisms floating in the brewery's air. Two distinct house cultures, kept in large wooden foeders, form the constant base of its funky saisons and golden sours, giving them their signature aromatic profile.
