The first time we tried Ascension Cider from Sussex we knew we had to set up a collaboration. Their approach to creating incredible ciders mirrors our approach to sour beer. Huge fruit additions, mad flavour combinations and above all - a finely tuned balance. We've teamed up to combine our strengths to bring you a Graff, a tart combination of Modern Sour Beer and fresh pressed apple juice. Riffing on this idea of a blend between beer and cider we opted for a joint favourite fruit addition of blackcurrants. The result is a tart, tannic and juicy interpretation of a Snakebite & Black in our Session Sour style.
We’re Vault City, an independent craft brewery and Scotland’s largest sour beer producer. We make heavily fruited, modern sour beers in (sometimes) sunny Edinburgh. Since 2018, we’ve focused on relentless exploration when it comes to brewing. Our house culture and mixed fermentation base beer pair perfectly with real fruit ingredients, and we use literally tonnes of the stuff in our recipes to help push the boundaries of what people would typically expect from a beer. We set out to modernise a traditional style of brewing with our take on fruited sours. Our modern sour beers have converted even the most stubborn non-beer and traditional beer drinkers, with a mix of accessible and adventurous flavours.
