A sparkling cider from Cidrerie du Vulcain in Fribourg, the house of Jacques Perritaz, who works with untreated high-stem orchard fruit using ancestral methods. This dry cuvée combines apple with apricot for a naturally sparkling cider at 5% (75cl). The fine, wine-like effervescence is achieved through natural fermentation with no added CO2. Dry and fruity, it marries the fresh acidity of the apple with the rich, perfumed notes of apricot, finishing clean and refreshingly thirst-quenching. Serve well chilled.
