A Swiss cider from the Cidrerie du Vulcain (Fribourg), Quatre Pépins extends the spirit of Jacques Perritaz's Trois Pépins — a blend of old-variety, untreated apples, pears and quinces — with a fourth component added. Dry and vinified, it displays an intense, complex nose of pear, honey, hay and white flowers, with the pear adding minerality and roundness, the apple providing tension, and the quince bringing floral notes. The palate is dry, fruity and lightly spiced.
