Bottling date: 06/07/2023 For this Druif, we macerated Pinot Noir (Spätburgunder) grapes sourced from Harth+Harth, a Demeter-certified biodynamic natural wine producer based in Rheinhessen, Germany. The maceration lasted over nine months before the wine was blended and bottled. We used over 60% aged lambic, giving this blend a weighted average age of over 28 months at the time of bottling. The final fruit intensity of this blend is 425 grams of Pinot Noir grapes per litre of Druif, or 320 grams in this bottle. Half of the grains used to brew the seven original lambics came from the Pajottenland.
