bottling date: 09/04/2024 number of bottles: 1,824 For this Druif, we macerated organic Roussanne grapes from Domaine La Baronne. This vineyard is located in the Corbières region of Languedoc, between Carcassonne and Narbonne. André and Suzette Lignères aim to create intense yet balanced wines, preserving the biodiversity of their vineyards through low yields and biodynamic viticulture. We macerated the whole Roussanne grapes for over eight months in an oak cask. We then blended them with four-year-old lambic. The proportion of four-year-old lambic accounts for over 60% of this refined grape-based blend. The weighted average age at bottling is therefore over 31 months. The final fruit content is 307 grams of grapes per litre of Druif. 100% 3 Fonteinen.
