Description

Brassée traditionnellement avec un mélange de malt d’orge et de malt de froment, Colomba trouve son parfum unique par l’infusion d’une préparation d’herbes et d’épices dans la cuve à houblonner. De fermentation basse, Colomba fait figure d’exception dans la catégorie des bières blanches habituellement brassées en fermentation haute. Non filtrée, Colomba présente un trouble naturel dû à la présence des levures : un dépôt peut également se former dans le fond de bouteille, typique des bières blanches artisanales.

The conditions were not at all favourable: the beer market in France was in decline, and Corsica was a land of wine and aniseed-flavoured spirits where beer did not enjoy a positive image. This negative context did not discourage them, but it took several years for the project to come to fruition. Finding land, sourcing small-capacity brewing equipment, which did not exist at the time and had to be invented (the first fermenters and the brewhouse were custom-made by a Corsican boilermaker), developing a recipe and, of course, seeking funding in a climate of mistrust towards the project (their families were the first investors), everything was complicated. People thought they were crazy, but the Pietra Brewery opened its doors in 1996, and Corsican beer was born: it was called Pietra, in honour of the Sialelli family's small village, Pietraserena. Armelle and Dominique then travelled the roads of Corsica to promote it at fairs and markets across the island. Pietra won people over with its taste, and after a few years, it could be found everywhere in Corsica. Since then, the Pietra clan has grown, with Serena, a pure malt lager, Colomba, the brewery's wheat beer, Pietra Bionda, Pietra Rossa, Colomba Rosée, Corsican IPA and, fresh out of the fermenters, a gluten-free organic lager.
