Description
La JONG is a Brett Ale made with Pilsner, wheat (a great aroma carrier for Brettanomyces) and Cara malt to give it its colour. The hops are local: Cascade and Flemish Golding . Finally, this is a co-fermentation of ODML + Brett "Blaringhemus", the Brett from our cellar. This is followed by three months in a warm room after bottling to create ideal conditions for the Brett, allowing it to develop its typical aromas quietly and discreetly.
Olivier and Mathieu, who founded the Brasserie du Pays Flamand in 2006, had long dreamt of returning to a more instinctive, more vibrant beer. In March 2025, La Spontanerie was launched in Blaringhem, at our historic site. It marked the start of a new chapter: a return to the essence of traditional brewing, as it was before the industrial era, but with our own perspective, our experience and our freedom. “We wanted to restore meaning to our craft, live out our passion to the full, and offer something different: an authentic beer, in direct connection with life itself.”
