A Swiss cider from the Cidrerie du Vulcain (Fribourg), made by Jacques Perritaz. La Fribourgeoise is a medium-dry cider blended from old-variety apples, pears and quinces. The complex nose mingles quince, numerous notes of buttery pear, the freshness of apple and herbal touches. On the palate, low residual sugar, fine acidity and a delicate, pearlescent effervescence make it long and powerful — one of the most structured ciders from the estate.
