29/04/2022 | For this particula Pruim, we macerated the Mirabelle variety for almost eight months on a small wooden barrel. As we used quite some two- and three-year old lambik for macerating and blending, the weighted average age of this fruit blend surpasses 28 months. More than half of the lambikken were sourced in our cereal circle in Pajottenland. The plums were also sourced locally. The final fruit proportion is 278 grams per litre. 100% 3 Fonteinen. Bottle count: 324.
